ABOUT US

Our mission is to share some of nature's healthiest and most beautiful produce. Located in Bambaroo North Queensland our mushrooms are hand grown and selected, using sustainable practices by mindful farmers. No pesticides, fertilisers or anything harmful in the food we supply. WHY EXOTIC MUSHROOMS:

 

Unlike buttons, which have a deep earthy flavor, wood grown gourmet species are sweeter, more refined, more varied and truly surprising. They are also more medicinal - truly gourmet food and cleansing at the same time.

 

All our mushrooms are safe to eat and a delight for "connaisseurs".  We grow species who enjoy forest like conditions and normally feed on wood, unlike button mushrooms, which grow on compost, darkness, and cased with peat moss - environmentally damaging. 

 

STERILE TISSUE CULTURE ON FARM

 

We run our strains from spore to tissue culture in our laboratory, produce our own sterile spawn on quality grains. We chose native hardwood sawdust for our final substrate, which gives the best quality mushrooms.

 

We sterilise our substrates at high pressure and inoculate them in our tissue culture room.

 

Most of our fantastic mushrooms are grown in the bush outdoors and are very healthy. They are packed with vitamin D that they generate from the sun, one serve of our mushrooms will easily meet daily requirements. 

We also have a fully climate control room with control over humidity, ventilation and light. We clean our grow and storage areas very regularly - this is critical to prevent crop failures.

WE DO NOT USE ANY PRESERVING GAS, PESTICIDES OR FERTILISERS.

Mushrooms grow primarily on sawdust which is supplemented with a small fraction of quality grains (mostly organic grains unless non available) which are washed, slow cooked, drained, sundried, sterilised at high pressure and further inoculated in the laboratory. We also use a fraction of bran and/or various organic materials that we research to improve the C:N ratio of substrate formulation while providing the best protein intake for our organisms. We never use manure or animal products. The water in our substrate is rainwater that is sterilised through the process of substrate production.

Sheltered greenhouses diffuse rainwater in the atmosphere, which ensures mushrooms grow. We also hand mist our mushrooms when necessary. The climate control room has a commercial humidifier on humistat and air conditioning.

We also grow our mushrooms directly in the bush at the farm, with misting irrigation. mushrooms loaded with vitamin D and beta-glucans, and truly part of the forest. It doesn't get more natural, our mushrooms are tasty and happy!

MUSHROOM NUTRITION AND HEALTH INFORMATION

​

Gourmet mushrooms such as Shiitake and Oysters grow naturally on wood logs and help recycle them into the new forest growth. They are a good addition to your diet and contain vitamin D. Did you know that many people are deficient in vitamin D? ...Causing mood problems, depression, loss of cognitive performance, bone problems... Mushrooms are extremely low in fat - a fantastic source of protein and minerals like copper and zinc.

Mushrooms have evolved for millions of years against similar pathogens we, humans, must confront. They must prevent other fungi, bacteria and viruses from killing them or taking over their food source (for instance, a wood log). As a result we can benefit from products originating from their own defense system which has evolved for longer than ours.

Mushrooms are a good source of fibre, quality protein, vitamin B (the "5 B"), minerals and importantly medicinal compounds called "beta-glucans" which modulate the immune system. Beta-glucans are complex polysacharides.

 

Many drugs and most of your cosmetic creams are derived from mushrooms without you knowing about it! In Japan cancer patients are commonly given shiitake mushroom "Lentinan" to prolong life and ease side effects of conventional cancer treatments.

There is a vast amount of ongoing scientific research regarding beta-glucans. Each mushroom species has its own spectrum of them, some have hundreds. It has also been shown that combining mushrooms is even more effective, as a broader spectrum of beta-glucans is absorbed in the body. This should not be seen as a single cure for cancer, but another ally to help you stay in top health.

Oyster mushrooms contain statins and lovastatin, a substance that reduces blood cholesterol and increases metabolism. Eating mushrooms regularly will improve your digestion, make you feel full quicker, and their fibers are good for gut bacteria. You must not eat them raw, but there are recipes to pickle them.

​

The Oyster Mushroom also has some bacteria fighting substances. In 1950, pleuromutillin, an antibiotic developed from the mushroom, was found to kill various bacteria including the bacterium salmonella. Pseudomonas is another bacterium that pleuromutillin was able to wipe out. A more recent research, (Stamets, 2005) found that Pleurotus ostreatus, which are extracts from the Oyster Mushroom, are able to weaken the bacteria Staphylococcus aureus and Escherichia coli. From a concentration of 100 000 000 per millilitre, the bacterial concentration dropped to a mere 1 000 per millilitre within a span of 24-72 hours.
